Poqui-poqui


FILIPINO RECIPE

INGREDIENTS:

4 large eggplants

4 tbsps. of vegetable cooking oil

6 cloves of garlic , minced

4 shallots or two onions, roughly chopped

3 - 4 tomatoes, wedge

4 eggs, lightly beaten

salt and pepper, to taste

STEPS:

  • Grill the eggplants enough to char the skin. Peel off the charred skin and chop the flesh.
  • Heat the cooking oil in a pan.
  • Put and saute the garlic, shallots or onions and tomatoes until fragrant and slightly softened.
  • Add the chopped cooked eggplants.
  • Season with salt and pepper and stir
  • Add the beaten eggs, stirring the eggplant mixture as you pour.
  • Cook and stir just until the eggs are set but still wet.
  • Turn off the heat and transfer the cooked poqui-poqui to a platter.

  1. I have tasted and liked Poqui Poqui. I think this cuisine will take about an hour to prepare
