FILIPINO RECIPE

INGREDIENTS:

1/2 c. thick coconut milk

1 c. rice flour

1 c. sugar

1/2 c. cornstarch

3 tbsp sweet corn kernel

4 c. fresh coconut milk or water

1/2 c. grated frozen buko (optional)

STEPS:

  • Heat the thick coconut milk over medium heat
  • Lower the heat when it started to boil and continue cooking for about 30 minutes.
  • The milk should separate into oil and solid curd. Stir constantly until curd turns into a dark brown color. Remove the curd from the pan and set it aside.
  • Grease a rectangular dish with coconut oil. Set aside.
  • In a medium saucepan, put the rice flour, sugar sweet corn kernels, cornstarch and fresh coconut milk.
  • Add in grated coconut milk.
  • Boil over low heat, stirring constantly to prevent lumps.
  • Pour hot mixture into prepared dish and allow to set.
  • Sprinkle latik or the brown curd on top. Cool before slicing.
