INGREDIENTS:
3 cups mix of hulled and quartered strawberries, blueberries, raspberries, and/or blackberries
4 egg yolks
1/3 cup sugar
1/8cup fresh orange juice
1/8cup fresh grapefruit juice
Pinch salt
Grated grapefruit zest
STEPS:
- Toss berries in a large bowl then transfer the berries to a separate dish. Set aside
- Put grapefruit and orange juice, sugar, egg yolk and salt into the mixing bowl.
- Whisk energetically until combined and turned into a pale yellow color.
- Set the bowl over a saucepan of simmering water. Do not to let the simmering water touch the bottom of the bowl.
- By using whisk or an electric hand mixer, vigorously whisk the egg mixture until it has added its volume. It must have a thick and creamy texture in about 4-5 minutes.
- Put the zabaglione over the tossed berries and sprinkle with a grapefruit zest.
- Serve immediately.
