 Szechuan cuisine or Sichuan or 四川菜, is a kind of Chinese cuisine that originates in the Sichuan province located in the southwestern China. It is popular for bold flavors, particularly with its spiciness. The generous use of garlic and chili peppers combined with the unique flavor of the Sichuan peppercorn make the cuisines very spicy.

Sichuan Cuisines, other name for Szehuan, is not concentrated on spicy food alone and in fact, only few are spicy out of hundreds of cooked food in the province of Sichuan. Spicy foods are what made the Szechuan cuisine popular and unique from other Chinese cuisines.
