5 pcs long green chillies, roll cut

STEPS:

· Cut the pork in chunk, about 2” x 2” x 3”.

· Grill pork over charcoal.

· Remove from grill

· Make small slices, about 1” x 1/8” x 1”. Place in a big bowl.

· Pour in vinegar,soy sauce, onion,long green chillies, salt and black pepper. Mix well.

· Squeeze one calamansi for every serving to enhance the flavor.

1/4 kilo Alugbati ( Malabar Spinach ) or Kulitis ( Native Spinach )

3 pcs Okra cut into wedges

1/4 kilo fresh Shrimp, shell intact

1 pc Talong ( Eggplant ), sliced

Salt to taste or Fish Sauce ( Patis )

2 cloves garlic, pound

6 cups of water

STEPS:

· Bring the water to a boil

· Add the fresh Shrimp

· Once the fresh Shrimp turns pinkish,

· add the Okra then wait until two minutes

· Add the Squash and cook until slightly fork tender.

· Add the String beans and Eggplant

· Add salt to taste or Patis

· Turn off the heat then add your leafy vegetables

· Serve Laswa immediately with Fried fish

STEPS:

· Boil chicken breast in 1 liter of water for 30 minutes or chicken is already well done.

· Remove chicken, reserve the stock.

· Shred the chicken breast, set aside.

· Saute garlic in oil or butter until golden brown, do not overdo it.

· Add ground pepper and chicken. Cook for a minute or 2.

· Pour patis to taste, cook for a minute or 2.

· Pour achuete mixture, cook also for a minute.

· Pour in chicken stock, boil.

· Put miki noodles, cook till noodles are done.

· Top it with ilocano chicharon (bagnet)

INGREDIENTS:

1-1/2 lbs pork cheeks (or 2 lbs deboned pork hocks)

1/2 lb beef or pork tongue

1/2 lb beef or pork heart

1/2 lb liver (pork, beef or chicken)

2 cups water (for boiling)

1 cup pineapple juice (for boiling)

1 tsp whole black peppers (for boiling)

Marinade seasonings:

1 cup chopped onions

3-4 finger hot peppers (siling labuyo) (seeded and chopped)

1/4 cup vinegar

1/4 cup calamansi juice (lemon juice)

1/4 cup pineapple juice

1 tbsp minced fresh ginger

1 clove garlic, minced

1 tsp whole black pepper (crushed)

1 pc bay leaf (crushed)

Salt to taste

STEPS:

  • Combine pork cheeks (or deboned pork hocks), heart, and tongue in pineapple juice, salt, water and crushed whole black pepper and bring to a boil
  • simmer for about 1 hour or until tender.
  • Drain and cool to room temperature.
  • Slice pork cheeks/hocks, liver, heart and tongue, into 2X 1/ 4 inch thick pieces.
  • grill over charcoal until pork rind is crisp and browned.
  • Chop the grilled pork cheeks/hocks, liver, heart, and tongue into 1/4 inch sized cubes;
  • Mix the chopped meat with the marinade seasoning mix of garlic, ginger, onions, vinegar, calamansi juice, hot peppers (siling labuyo), bay leaf, salt and pepper;
  • Keep the marinated mixture in the refrigerator for 2-3 hours before serving.

INGREDIENTS:

1/2 kilo beef shank

1 bundle of pechay or bok choy

1 bundle of string beans (cut into 2 inch slices)

2 pcs eggplants (sliced)

1/2 cup peanut butter

1/2 cup shrimp paste (bagoong)

1 Liter of water

1/2 cup annatto seeds (soaked in a cup of water)

1 tbsp garlic, minced

1 large onion, chopped

salt and pepper to taste

STEPS:

  • In a large pot, add water and beef shank then boil for 3 hours or until tender (35 minutes if using a pressure cooker)
  • Once the meat is tender, add the peanut butter, and coloring (water from the annatto seed mixture) and simmer for 5 to 7 minutes
  • On a separate pan, saute the garlic then add the eggplant, and string beans and cook for 3 minutes
  • Transfer the cooked vegetables to the large pot (where the rest of the ingredients are)
  • Add the Pechay or bok choy simmer for 2 minutes
  • Add salt and pepper to taste
  • Add brown sugar and more peanut butter if you want it sweeter dish
  • Serve hot with shrimp paste.

INGREDIENTS:

2 kg beef bone marrow, have your butcher chop it into small pieces

1 kg boneless beef shank or stewing beef

1 onion, peeled and sliced

3 liters water

2-3 medium potatoes, peeled and quartered

2-3 saba (plantain) bananas, each cut into two pieces

2-5 sweet corn

1 whole medium cabbage, quartered

3-4 tablespoons fish sauce (patis)

Salt and pepper to taste

STEPS:

  • Place bone marrow, corn and onion in a stockpot, pour in the 3 liters of water and bring to the boil.
  • Lower heat and simmer for about 40 minutes.
  • Remove corn and set aside. Cut it into 3
  • Add the boneless beef shank or stewing beef and return to the boil.
  • When it boils, lower heat and simmer until beef is tender, about 1 to 1 ½ hours.
  • Add the potatoes and bananas.
  • Simmer until potatoes and bananas are tender, about 10 to 15 minutes.
  • Add the cabbage and stir in fish sauce, salt and pepper to taste.
  • Cook until cabbage is tender-crisp, about 2 minutes. Put corn
  • Serve with rice.

2 cups coconut milk (gata)

2 tablespoons of oil

STEPS:

  • In a casserole, sauté garlic, ginger and onions then add the pork.
  • Mix in the gabi leaves.
  • Pour in the coconut milk (gata) and bring to a boil then simmer for 15 minutes.
  • Add red hot chilies, salt and simmer for another 5 minutes.
  • Add the coconut cream and continue to simmer until oil comes out of the cream.
  • Serve hot with plain white rice.

INGREDIENTS:

1 pack Munggo or Mung bean ( 1 lb )

1 tbsp garlic

1/2 kilo chicken leg (Choice cuts)

1 cup Malabar Spinach ( Alugbati )

1 cup String Beans ( Sitaw )

2 pcs medium sized tomatoes, chopped

1 medium sized onion, chopped

3 tbsp fish sauce

24 ounces water

1 pc Beef cube (to add more flavor, optional)

STEPS:

  • In a pan, add the Monggo or Mung bean, beef stock then bring to a boil.
  • Simmer until the Monggo or Mung Bean is soft enough (about 35 to 50 minutes)
  • On a separate pan, saute the garlic,onion, and tomato then add the chicken then cook for 5minutes.
  • Add fish sauce then let it simmer.
  • Add water and simmer for 1-15minutes.
  • Pour the cooked Mung beans and String Beans then simmer for 10 minutes, now add the Malabar spinach ( alugbati )
  • Add salt and pepper to taste
  • Serve hot with Fried fish or Pork.

FILIPINO RECIPE

Napoleones is one of the specialties of Bacolod. It is made of puff pastry and glazed sugar. It is the Filipino version or it is similar to the French pastry dish mille feuille.


INGREDIENTS:

Puff Pastry:

2 1/2 cups all-purpose flour

100 ml of cold water

220 grams butter, chilled

pinch of salt

1/4 tsp vinegar or lime juice


Custard Filling:

1/2 cup butter

2 cups evaporated milk

5 egg yolks

3/4 cup sugar

1/3 cup flour


Sugar Glaze:

2 cups sifted confectioners sugar

tablespoon vanilla extract

2 to 3 tablespoons boiling water

STEPS:

Custard Filling:

  • In a heavy saucepan cook the butter, evaporated milk, egg yolks, sugar and flour on a low heat and constantly stir.
  • When the mixture has thickened, remove from the heat.

Sugar Glaze:

  • In a medium mixing bowl, put in the confectioners sugar and vanilla.
  • Stir in enough boiling water to make a glaze of spreading consistently.

Puff Pastry:

  • Cut around 40 grams of butter and melt it butter. Chill the remaining
  • Make a well in the middle of the flour mixture and add vinegar or lime juice, melted butter then pour in the water. Mix well, knead the dough.
  • With a rolling pin, flatten dough into a rectangular shape.
  • Place the chilled butter in the middle and fold the corners, right over left, making sure to seal the edges.
  • Only with the finger tips, this way you are transferring little heat onto the dough.
  • Roll and flatten the dough into a rectangle, roll it on top of a large tray, to keep the dough cold to avoid the butter from melting inside.
  • Put the large tray with the dough inside the freezer to chill butter inside the dough.
  • After 10 minutes, remove dough from freezer, fold again right over left and roll and flatten again with a rolling pin to form another rectangular shaped dough.
  • Repeat this process 4 times. Cut into rectangle shape.
  • Preheat oven to 450 degrees. Bake the dough for about 10 to 15 minutes or until crust is golden. Cool completely.
  • Cut puff pastry in half to insert custard filling.
  • Pour glaze over the top.

Trappist Westvleteren 8 is one of the best strong beer that you could have ever tasted! It got good feed backs on different beer reviews. This beer made from Belgium is a world favorite. Its taste and aroma are amazing! I bet that once you have tasted this best strong beer, it would be one of your favorites!

This best strong beer pours a deep dark chestnut brown color which is completely opaque with a one finger off-white head that slowly fades into a thin lasting ring. Minimal spots of lacing left behind. I find it alluring and I may say, its appearance is already a winner! Severalbeer reviews said its appearance is a "Belgian Classic" that's why everyone is being hooked into it by just its appearance.

Spicy, estery aroma with lots of vinous dark fruit, zesty pepper and earthy hops are the aromas you would sense on this best strong beer. Complex nose with lots of plum, grape, raisin, fig, date and dark cherry are present as well. This is complimented by a nice roasted malt presence with hints of chocolate and caramel and subtle earthy pine. Peppery with coriander as well as hints of yeast/bread, sweet alcohol phenol and licorice. Its complex aroma gives another plus factor for this best strong beer.

Medium bodied with a prominent spicy and hoppy flavor that lingers over the roasted malt body and sweet dark fruit notes into a dry finish for this beer. Dry, earthy and slightly bitter with some piney hop flavor which is complimented by the zesty, peppery spice. This is countered mid palate by a slightly roasted chocolate malt backbone with hints of caramel, toffee, biscuit and licorice. Hints of slightly chalky, bready yeast add complexity and fullness to the body. Toward the end of the swallow there is a very prominent vinous dark fruit flavor with hints of fig, raisin, plum, grape and dark cherry. The hops have held up surprisingly well and are very prominent in the flavor profile. The malt and dark fruit notes are enhanced as it warms, balancing things out a bit. ABV is excellently masked with subtle alcohol sweetness but no heat whatsoever making this pretty quaffable.

Overall,  Trappist Westvleteren 8  is one of the most interesting trappist beers I've had. It's well balanced but much hoppier than any Belgian beer in this style that I have encountered. The malt and dark fruit notes really start to shine as it warms. Different beer reviews state that it is truly one of the "bestest" ever! This beer is recommended drinking at cellar temperature or letting it warm up considerably to enjoy it at it's fullest potential. Not as complex, flavorful or easy to drink as the 12 but it's still pretty good! Two thumbs up for Trappist Westvleteren 8!





The Abyss

The Abyss would definitely be one of the best light beers I had tasted! It is overwhelmingly famous due to different beer reviews that it has been included. This beer made from Oregon, United States is one of the many favorites by the Americans. It is undoubtedly a must taste beer, a prove to that would be almost majority of all beer reviews gave it a good remarks!

This best light beer pours pure black- darker than used engine oil. Its color is quite a unique one when you compared it to the normal color of beers. When I hold this up to the bright sun there are no highlights revealed. I mean this is totally black. The pour produces two fingers of doughy dark brown compact head that coats the glass. Again, the looks of this best light beer is awesome!

The nose is one of the most complexes of any dark beer I have smelled in quite some time. A touch of smoke overlays a duo of roasty malt and hops. A further hoppiness pairs with tannic notes of woody oak. A slight touch of vanilla is probably due to the added vanilla and not bourbon barrel; only 6% of the beer in these bottles ever saw the inside of one but then who know? Maybe it was a young set of barrels. I find it great.

Well this best light beer is complex. I guess I will start with the basic stout flavors, which are present in this beer but there is so much happening on top of them that I have to think about it to isolate them. Hops are here in plentiful quantities and they pair with the roast of the dark malts in the typical big stout fashion. The most prominent non-traditional stout flavor is a pronounced woodiness. This is a popular comment on "The Abyss" on different beer reviews. Anyway, it almost reminds me of roasted chicory, or an over-oaked stout I brewed once. Anyway, this flavor almost dominates, but doesn't eclipse everything else. I do taste both licorice and a tiny bit of vanilla, which are both tasty. So I wonder if that particular woody flavor is the cherry bark. Regardless of the flavor of this best light beer that you would taste, I tell you its taste was simply epic! 

The mouthfeel is rather dry and viscous, but not as thick and chewy as something like Bourbon County Stout. I think it is still quite good, and I imagine that it is exactly what the brewers at Deschutes intended. Carbonation feels fairly low.

This beer as expected is an awesome beer! It has so many flavors that it is walking the line between complex and muddled. I like it quite a bit, but find myself straying back the purist mindset of doing little to a beer save for aging it in oak. However, this beer is doing something awesome and this beer is recommended for everyone loves American brewed beers! It should be tried by anybody who has an interest in American beer or big dark beers of any sort. Kudos to this beer!

Kuhnhenn Bourbon Barrel Fourth Dementia

Kuhnhenn Bourbon Barrel Fourth Dementia is an all time favorite on different beer reviews! This beer made from Michigan, United States is a worldwide favorite. This best strong beer should be tasted by everyone! This will complete your world's best beers list.

The appearance of this best strong beer pours a small, medium-thin, light tan head with lousy retention. Really noisy and fizzes down to a slight ring very quickly. Color is a clear seal brown with no carbonation evident. Slight ring remains but leaves no lacing down the glass. Not off putting, but definitely not attractive. Majority of beer reviews find it lame. Forget this though; the rest is killer!

The aroma of this best strong beer is the first big plus factor! A big, bold nose of bourbon barrel. Lots of oak, vanilla, piles of bourbon, and some nice caramel and toffee aromas. Notes of maple syrup and brown sugar as well. Smells like barrel aged sweet goodness. It is a total pleasure for the nose! If you would base it just from its aroma, it would be the best among the best strong beers around the globe! Different beer reviews on the 'net would agree to me!

Its taste is as much like it smells, but moves from a tamer initial flavor to a burst after the swallow. Caramel and toffee flavors up front, with lots of maple syrup and lots of brown sugar. After the swallow, an avalanche of oak, vanilla sweetness, caramel, and lots of bourbon goodness. Quite boozy and barrel heavy after the swallow, but it’s very, very tasty. Bold and lingering aftertaste is full of caramel sweetness and bourbon barrel, but is perhaps a little too hot for top marks.

Kuhnhenn Bourbon Barrel Fourth Dementia's mouthfeel was excellent! Medium-full body with medium carbonation. Creamy on the palate, goes down smooth with a blast of heat after the swallow and finishes slightly sticky. A big alcohol burn at the end is a little rough, but the rest of the palate is strong enough to support such a big brew.

Overall, what a tasty treat! It deserves to be one of the best strong beers indeed! This one is very barrel forward, especially after the swallow, and although I usually like my BA beers a little more nuanced, this one just seems to work. The base beer and relatively full bodied palate are big enough to support the big barrel presence, making it a delicious brew as opposed to a harsh booze bomb. It is, admittedly, still a little hot, but with a little time, this will be outstanding. In fact, according to the masses, it already is outstanding. I can’t argue with that. This beer is recommended for all those beer lovers out there! 

Russian River Supplication

Supplication is one of those beers that caught my attention when I read some beer reviews. It is considered as one of the best strong beer ever! This beer made from California, United States is simply great. One must truly try this one.

The appearance of this best strong beer is the first plus factor. A lovely amber ale pours from the bottle and falls under a finger of taupe foam of fine nature. The foam settles into a solid, thick sheet of the same. Sandy, spotty lace as I may say. Excellent clarity. Looks both rustic and inviting. 

Its aroma is another win factor for this best strong beer. What jumps out at me immediately is how much this smells like a Flanders Red now, oak and cherry hues over an apple cider vinegar intonation. There's a tannic characteristic in the nose as well. There's a slight grassy funk which is woven into the tart and woody characteristics quite well. Although there is much going on here, I find the nose a little too delicate. The aroma of this best strong beer is a favorite on different beer reviews, which I indeed agree.

The taste of this best strong beer end up our conversation on why it is consider one of the best. Tart with cherries so dominant. I am very, very surprised on how pronounced the cherry is here. It is followed through with oak, dry grapes, and interesting canned spinach flavor. I'm noting an umami/leather flavor as well. It is complex and intriguing indeed. There's a bitter undertone that is just bitter enough to impress me to reserve appreciation for the other flavors, but just as I start to get annoyed, it seems fleeting, and I almost seek out the bitterness to help clean the medium of my tongue. The tart aspect of the beer is inhibited by this bitterness in so much as it accentuates the character and marries the other nuances of the beer together. Seriously, this is really, really well blended beer. Impressive indeed! It is no wonder why it is one of the favorites on different beer reviews.

Its mouthfeel was great. Medium bodied and lively foam conspire to a really velvety feel and as this roams my mouth, I think it will dry it out. Upon swallowing and exhaling, my mouth is simply wet and the notes are warmed via alcohol and blossom back through the mouth. Really nice feel here. I'm hard pressed to think of what I would change here, can't think of a thing, a hard earned 100% here.


Overall, I am struggling to think of another beer in this particular style I prefer to this one. I am calling this a Flander's Style, and I am only considering one other in the realm that competes for me: Dissident. And only time will tell if the '11 batch will meet expectations. I really enjoy this beer. And although I'm not likely to go out of my way to find it as much, I would likely grab some next time I see it on the shelves. This beer is recommended for all those beer lovers out there!


Parabola

To do a beer review for a Parabola from Firestone Walker Brewing Company is good thing to do before wrapping up the night. I consider this one as one of the best strong beer ever! This beer made from California, United States is simply a "MUST TRY!"

The appearance of this best strong beer is a commendable one. Jet black, opaque with subtle ruby highlights at the top of the body makes it really attractive. It pours a thin, bubbly, mocha-colored head that settles into a ring around the glass. Pretty good lacing for a 12.5% ABV beer. A very attractive looking Russian Imperial Stout. It is the most commendable feature of this beer on beer reviews in the internet.

Parabola's aroma is amazing as well. Soft notes of vanilla and oak up front made this best strong beer a lot amazing. There is lots of vanilla and oak, but it is not in-your-face-strong. Figs, raisins and cherries were pretty apparent too. Creamy chocolate is the very theme of its aroma. Some really mellow bourbon notes and a little molasses are present as well same with some touch of booziness. Very complex and balanced aroma indeed.

The taste of this best strong beer is very smooth, nuanced, complex and balanced! No single flavor is in your face, but there are a lot of different, noticeable flavors here. Brown sugar and creamy, unsweetened chocolate hit first then lots of dark fruits followed. Tons of fig and raisin sweetness on the mid-palate and vanilla and oak with a little dark rum towards the end. Some bourbon and molasses in the finish with a little alcohol warmth. As the beer layers, I am detecting hints of roasted nut. Plum comes out too, and more bourbon as it layers. More unsweetened chocolate in the finish as it layers. This one is absolutely delicious, and boy does it linger! It truly deserves to be one of the best strong beer ever!

Parabola's mouthfeel was full bodied, thick and oily. Quite viscous, with the perfect level of carbonation until it finishes slightly sweet. 

Overall, an absolute flavor bomb that is incredibly balanced. The bourbon builds up as it layers, but neither it nor the dark-fruit sweetness of the beer ever overwhelm. Can't wait to see how age affects this brew! All beer reviews gave this one a good remark!

This beer is recommended for all! Not too intense for casual beer drinkers, and loaded with enough complex flavors for even the most jaded beer geek. This is a brew that lives up to its hype. Bottom line: Seek this one out! This is a good pair for a well-aged steak. This is a special beer that should be paired with a classy meal. Probably would pair well with a fancy warm chocolate cake. 

Duck Duck Gooze

Duck Duck Gooze is one of the best light beers that my cousin has recommended to me. Usually, I hate those beers that my cousin is telling me to taste, but this one; I truly LIKE it, and hey I read beer reviews regarding this and it seems a lot true!  This beer made from California, United States is simply epic and all beer lovers out there must try!


The appearance of this best light beer was okay. From a 750ml corked and caged bottle this brew pours a clear golden yellow color with a pillow of white fizzy head sitting atop. The bubbles are fairly large and the cap is supported by a constant stream of rising carbonation. This is quite an attractive looking offering that displays no haze and spotty lacework clings to the glass.

The smell of this best light beer is funky suggesting notes of Brett that are introduced in a pleasing way that breaks up a readily apparent indication of fruity lemon zest. The smell of this brew was an exciting surprise of lemon verse the funk I was expecting. There is seemingly no indication of alcohol to be found in this smell. It is well rounded and super enjoyable before I have even taken a sip. Every beer reviews commend its smell.

The taste of this best light beer is quite acidic blended with notes of Brett that impart a lightly cheese-like flavor coupled with an overall funkiness. It is both tart and acidic that gives an accent to the light lemon flavor that is included. The Brett is enjoyable, not too subtle that you have to search for it and not overpowering at all. The lemony aspect seemingly clings inside the mouth with nearly an oily lasting power of resins. At times this brew seems to pick up a contrasting sweetness that is revealed as I concentrate more on the lemony flavor. The blend here of flavors is enjoyable and seemingly different with every sip, awesome array of tartness, acidity and funk before the first indications of the bitey alcohol reveals itself once the brew is warm. This is the reason why I agree to my cousin for the first time. It deserves to be called one of the best light beers!

This is a medium to light bodied brew with a moderate to high level of carbonation. Very easy drinking and enjoyable with it's tangy acidity and drying quality on the tongue. The alcohol is well integrated into this brew, it just works. Each sip has a big salivation factor to it which urged me to drink more almost carelessly without thinking about the characteristics it was offering. The only thing I can fault this beer for is its lack of availability. I wish I could drink this on a regular basis. All beer reviews regarding this beer (those positive ones) are so true! This beer is recommended for office parties and other family gatherings.


Bourbon County Brand Coffee Stout

Bourbon County Brand Coffee Stout is one of the best strong beer! This beer made from Illinois, United States is a favorite due to its unique taste. Several feed backs from different beer reviews gave it a good comment.

This best strong beer pours completely black with visible viscosity.  Not quite motor oil, but pretty darn thick.  A very thin mocha-colored head gently sits atop the blackness and remains there for most of the glass.  Great legs and a decent amount of lacing is one of the plus factor for this best strong beer.

Its aroma was good as well! Barrel characteristics are dominant; great bourbon, oak, and vanilla right up front, making a wonderful English toffee aroma. The coffee is a little more subdued that I had expected, but this is exactly what I was hoping for.  Being about a year old  in our house may have toned down some of the coffee qualities, but I was hoping that it would subtly add to the already complex BCBS. Beer reviews commend its aroma and the newly brewed beer is as great as the stored beer.

The taste of this best strong beer is a just a small plus factor. Coffee is a little more pronounced in the flavor, but it's not overwhelming at all. The coffee is more concentrated and fresh; resembling espresso perhaps. Bourbon, dark chocolate, oak, vanilla, toffee are just behind the coffee, really putting the taste buds to work.  Finishes somewhat sweeter than the start, but again, it's not overwhelming. Amazing complexity yet balanced almost to perfection.  Just a bit of booze at the end that creates a complementary warming effect. I still commend its taste for its uniqueness. It still passes my taste although its not that much of the "best". Beer reviews got different feed backs on its taste but majority of it still gave Bourbon County Brand Coffee Stout a good remark.

Mouthfeel was okay. This stuff can coat.  This is thick, creamy, and viscous on the palate.  There is a weight to it that sits on the tongue and leaves almost as much of an impression as the taste itself.  Lower carbonation seems great for the beer ... just enough to enhance the flavors and creaminess, but not enough to make it prickly.

Despite the "size" of the beer, it was pretty darn easy to put down.  The bottle was split four ways, and, although I wish I had some more of it, a fourth of a bottle was really enough to meet optimal satisfaction.  It wasn't work putting it down like some other big stouts, but might had become that if I had consumed any more.  Definitely my favorite of the BCBS lineup that I've tried thus far.  


Overall, I loved this best strong beer!  This beer is recommended for dinner parties and other family gatherings. You should put this beer on the list of beers you should taste!
