Clam Chowder YUM!!

INGREDIENTS:

2 tablespoons olive oil

2 slices bacon chopped

1 large onion, chopped

1 cup chopped celery

4 cups potatoes diced

2 cups chopped clams

2 cups clam juice

1 teaspoon fresh thyme or 1/2 teaspoon dried

Water

Ground black pepper

STEPS:

  • Heat the oil in a pot over a medium-high heat.
  • Saute the bacon, onions and celery.
  • Stir occasionally, until the vegetables begin to soften. Add the potatoes, clams, clam juice, thyme and water, and cover.
  • Bring to a boil, and simmer until potatoes are soft. Season with salt and pepper.
