Royal bibingka


FILIPINO RECIPE

INGREDIENTS:

1 kg glutinous rice

150 grams powdered coconut milk

10 cups coconut milk

1/ 2 cup butter

1/ 2 kg sugar

3 cup young coconut meat, slice into strips

1/ 2 cup grated cheese

1/ 4 cup butter

STEPS:

  • Mix all ingredients except for grated cheese and 1/ 4 butter.
  • Place mixture in a shallow baking pan. Bake it at 350 F for 15 minutes.
  • Take it out of the oven, brush surface with butter and sprinkle grated cheese on top of the partially-baked bibingka.
  • Cover bibingka with aluminum foil so as not to burn surface prematurely.
  • Put it back in the oven for another 20 minutes.
  • Brush on remaining butter in between checks.
  • Take it out from the oven and let it cool down. Slice it up and serve.
