1/3 cup shortening

1/3 cup ice water

Filling:

1 medium sized onion, chopped

3 cloves garlic, minced

4 tablespoons vegetable oil

2 tomatoes, peeled

1/4 cup raisins

1 tsp vinegar

  • Sprinkle dough with enough ice water to hold it together. Knead together briefly and allow to rest, cover for about 10 minutes.
  • Roll dough out on a lightly floured board to circles about 3-4 inches in diameter.
  • Saute onions and garlic in hot oil until translucent. Add meat, sauté 5 more minutes. Stir in tomatoes, stock and remaining ingredients. Simmer 30 minutes.
  • Put a spoonful of empanada filling of your choice on one side of the circle. Fold the dough over the filling to make a half circle. Press the edges together to seal.
  • Put and heat oil enough for deep frying and put the empanada, deep-fry until the crust is crunchy and slightly golden on color.
