Buko Pandan Salad


FILIPINO RECIPE

INGREDIENTS:

4 leaves of Pandan leaves

2 Coconut- coconut meat must be grated to strips

4 cups of coconut water/ juice

2 cups all purpose Cream

1/2 Condensed Milk

2 envelopes unflavored green gelatin

STEPS:

  • In a saucepan, boil 2 1/ 2 cup of coconut water with pandan leave twisted. Simmer for 20 minutes.
  • Add coconut strips and cook for 5 minutes.
  • Remove and discard the pandan leaves.
  • Strain the coconut strips and set aside.
  • In a saucepan put the unflavored green gelatin powder and add 1 3/4 cup of pandan-coconut water. Bring it to boil until powder is melted.
  • Put it in a mold. Let it set and chill it for 30 minutes.
  • In a mixing bowl mix the cream and condensed milk. Add 1/4cup of pandan-coconut water. Add the coconut strips and mix it well.
  • Slice the geltatin into cubes and put it in the buko salad.
  • Serve it cold.
