FILIPINO RECIPE (ILOCO)

INGREDIENTS:

Pig’s Ears

Pig’s Neck

Pig’s Cheeks

Pig’s Liver

Calamansi juice or lemon juice

Vinegar

Onions, minced

Ginger, minced

Salt

Powdered pepper

Pig brain, or mayonnaise as alternative ingredient

STEPS:

  • Boil pig’s meat and liver. (half cooked)
  • After parboiling grill the meat and liver.
  • Cut thin and lengthwise, about an inch, and put in a mixing bowl
  • Add onion and ginger, mix with salt and powdered pepper
  • Add the calamansi or lemon juice and vinegar according to taste
  • Mix thouroghly
  • If you want to add the pig’s brain boil it with vinegar until soft. Then mash and mix it with meat.
  • Or add mayonnaise if you don’t like the pig’s brain.
