FILIPINO RECIPE (ILOCO)
INGREDIENTS:
Pig’s Ears
Pig’s Neck
Pig’s Cheeks
Pig’s Liver
Calamansi juice or lemon juice
Vinegar
Onions, minced
Ginger, minced
Salt
Powdered pepper
Pig brain, or mayonnaise as alternative ingredient
STEPS:
- Boil pig’s meat and liver. (half cooked)
- After parboiling grill the meat and liver.
- Cut thin and lengthwise, about an inch, and put in a mixing bowl
- Add onion and ginger, mix with salt and powdered pepper
- Add the calamansi or lemon juice and vinegar according to taste
- Mix thouroghly
- If you want to add the pig’s brain boil it with vinegar until soft. Then mash and mix it with meat.
- Or add mayonnaise if you don’t like the pig’s brain.
